Hawaiian Haystacks



One of our favorite meals around the house right now is Hawaiian Haystacks.  They are perfect when you are craving something crunchy, warm, and cold... all at the same time.  It's also great for leftovers.

Hawaiian Haystacks- Ingredients


Here's how we cook ours up at the house:




  • 2 cups shredded chicken

  • 2 cans cream of chicken soup

  • 1 cup chicken broth

  • 1 cup water

  • cooked rice

  • Toppings (pick any that you like): almonds, cheddar cheese, chow mein noodles, diced celery, diced tomatoes, pineapple chuncks, raisins, shredded coconut, soy sauce, green onions, olives.


Mix soup, broth and water over medium heat.  Create your Haystack by starting with the rice, then cream of chicken sauce, chicken, and then toppings as desired.

Kids love this meal too because they get to create their own.  Enjoy!

Our family loves this classic too! We like to throw the cream of chicken soup, chicken broth, and chicken in the crock pot for 4-6 hours and shred the chicken while still inside the crock pot when it is all cooked. It is so tender that way. The chicken "gravy" is so delish! Crock pots are amazing, aren't they?
We had our Indian neighbors (here for post-operative research) over for dinner and served this meal... it kind of backfired when we found out they are used to eating with their fingers- not forks! It was quite a messy experience for them!
