And you could still have mashed potatoes with a vegetarian gravy (made with a roux, vegetable broth, poultry seasoning, pepper). I know your DH doesn't love dressing, but you could make it with veg. broth instead of chicken if you wanted it. Most of my dressing recipes I've used don't have meat any way. I don't know if he likes fresh mashed sweet pot. They mixed "turkey" seitan in with the stuffing, and then covered it with puff pastry and baked. Sort of like a stuffing pot-pie. It was fantastic, and very Thanksgiving-y. I would make a bunch of really fun veggie sides. The NY Times has some great recipe ideas right now, and you can check Mark Bittman's archives.
